Every holiday season, Disney’s Grand Californian Hotel & Spa goes all out with a gigantic holiday confectionery structure made out of gingerbread and other candy ingredients. Once again resembling the hotel itself, the theme this year celebrates Mickey’s Christmas Carol. Plus, if your sweet tooth calls, a special cart in the lobby sells gingerbread and other themed treats.

Here’s everything you need to know about the sweet treats at Disney’s Grand Californian Hotel & Spa during the 2025 Disney Holidays season at Disneyland Resort.

About the Confectionery

The structure took 720 hours to complete and this year it celebrates Mickey’s Christmas Carol which is also being featured for holiday dinners at the nearby Storytellers Cafe. The building resembles the facade of the Grand Californian Hotel & Spa itself but with a holiday twist. Silhouettes of characters from the animated special can be seen in the windows and there’s even some peek-in opportunities recreating vignettes from the cherished animated short film.

Some of the stats for this year’s candy confection:

  • 520 pounds gingerbread dough
  • 480 pounds powdered sugar
  • 60 pounds fondant
  • 45 pounds dark chocolate
  • 40 pounds white chocolate
  • 30 pounds rice cereal treats
